Yesterday I was so inspired by a friend who gave her floors a good scrub. I thought if she can do it with two little ones, I can too. During nap time I put on a fabulous movie (North and South) and got busy. I scrubbed my hardwood floors, did a load of towels, did dishes, and since I was on a roll, I decided to bake cookies too. Why not, right? I put my butter in the microwave to soften and happily continued with my work. I was watching my movie and had the dishwasher, washing machine, and kitchen aid going so it was pretty noisy in my kitchen. I added my eggs, sugar, flour, etc. I thought the dough looked a little dry, but didn't think much of it. I put the cookies in the oven and then settled down to relax and watch my movie. The dishwasher stopped. The washing machine stopped. Then I heard a little beep, beep. What's in the microwave, I thought? I opened it up and tada! MY BUTTER! I had already pulled the first batch of cookies out of the oven! I successfully made cookies without any butter. Surprisingly they taste alright. I don't think I'll be posting the butterless recipe though!

I would love a good butterless cookie recipe. My sister made some once with white beans cooked and smooshed up instead of the butter. They were all right actually. But if I'm going to eat a cookie, I'll take the butter and all the calories that go with it.
