for the love of asparagus

It's April and you know what that means.... Asparagus! Since there is such a tiny window when it's at its best I like to eat a lot of it. Here is a favorite and easy recipe I've been using lately:

Roasted Asparagus

one bunch asparagus woody ends trimmed
several tablespoons olive oil
1/2 lemon
salt and pepper

1)preheat oven to 425 F
2)on a cookie sheet covered in foil, toss asparagus with enough olive oil to coat well
3) squeeze lemon over the asparagus
4) season with salt and pepper to liking
5) roast in oven for 10-15 min or until a fork will easily pierce through
