grilled red pepper and goat cheese sandwich

I absolutely LOVED this dinner! It was fast and just incredibly flavorful!

  • Flat bread
  • Red bell pepper, sliced
  • Goat cheese
  • Olive oil
  • Black pepper
  1. Cut flat bread in half with a knife or pizza cutter
  2. Spread a little bit of olive oil onto each piece of flat bread
  3. Place on a cookie sheet
  4. Bake at 350 degrees for 5 minutes or until the bread is a little crispy
  5. Sautee the red bell peppers in a bit of olive oil and black pepper
  6. Place peppers on the flat bread and top with crumbled goat cheese
