mint brownies

I made these delicious mint brownies for my sweetheart on Valentine's Day. They take a little bit of time since you have to do it in stages, but it is a fairly simple recipe. To me, these brownies are so worth the effort!

Ingredients

Brownies
  • 1/2 cup butter
  • 4 oz unsweetened chocolate
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 1/2 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon salt
Frosting
  • 1/4 cup softened butter
  • 2 1/2 cup confectioners sugar
  • 1 1/2 to 3 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • green or red food coloring
Topping
  • 3/4 cup chocolate chips
  • 3 tablespoons butter

Directions

Brownies
  1. Place the butter and the chocolate in the microwave
  2. Heat for 1 min.
  3. Stir until smooth
  4. Stir in other ingredients.
  5. Pour into 9x9 pan
  6. Bake at 350 degrees for 25-35 min
  7. Cool the brownies
Frosting
  1. Cream the butter and confectioners sugar
  2. Add the milk a little at a time
  3. Beat until smooth
  4. Add the food coloring and extract
  5. Frost the cooled brownies
  6. Chill again for 1 hour
Topping
  1. Melt the chocolate chips and the butter in the microwave for 1 1/2 min
  2. Stir until smooth
  3. Pour over the brownies and smooth with a knife
  4. Refrigerate for at least 45 min. Until topping hardens
  5. Bring brownies out to room temperature before cutting into squares
