Chocolate Zucchini Muffins

1/2 c. butter
1/2 c. veg. oil
1 c. sugar
2 large eggs
2 t. vanilla
1/2 c. milk mixed w/ 1/4 t. vinegar
2 1/2 c. flour (I use half whole wheat)
4 T. cocoa powder
1 t. soda
1/4 t. cinnamon
1/2 t. salt
2 c. peeled and finely grated zucchini (3 small)
1 c. chocolate chips
1/4 c. nuts (optional)

325 degrees
Line pans with papers.
Add all ingredients and half of chocolate chips.
Stir well.
Fill muffin cups 2/3 full.
Sprinkle with other half of chocolate chips and nuts.

Yields 24 muffins.

Baking Time: 20-25 min.
