maple pecan granola

After a break from granola making, I am back at it and loving it.

Ingredients

  • 4 cups old-fashioned rolled oats
  • 1/4 cup wheat germ
  • 1/4 cup flax seeds
  • 2 cups coarsely chopped pecans
  • Salt, to taste
  • 3/4 cup agave nectar
  • 1/2 cup butter or margarine, melted
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup maple syrup
  • 1/4 cup brown sugar
Directions
  1. Combine oats, nuts, wheat germ, salt and flax seeds in large mixing bowl; mix well and set aside.
  2. Combine agave, butter, cinnamon, vanilla, syrup and salt in saucepan; bring to boil and cook one minute.
  3. Pour agave mixture over oat mixture and toss until well blended.
  4. Sprinkle brown sugar over the mixture and blend.
  5. Spread in lightly greased cookie sheet.
  6. Bake at 350°F for 20 minutes or until lightly browned; stir every 5 minutes. Cool. Crumble and store in airtight container in the refrigerator.
