Eggs Benedict

These are super unhealthy, but absolutely delicious on special occasions.

2 sticks butter
1 lemon, juiced
Canadian bacon
English Muffins

Bring pot of water to boil. While waiting for water to boil, place English muffin halves and equal number of Canadian bacon on a cookie sheet. Lightly butter muffins and place under broiler for a few minutes until golden (careful not to dry out Canadian bacon). Back to boiling water: with a spoon begin stirring the boiling water in large, circular motion. When the tornado is twisting crack in the number of eggs you're making. The egg will wrap around itself as it cooks keeping it together. Cook about 3 min. In small saucepan, melt 2 sticks of butter until sizzling (don't let it burn). Place 3 eggs yolks in blender (turn on blender until combined). Begin pouring in hot butter in a thin stream into the blender. (Keep blender on the whole time). Squeeze in lemon juice. Add a pinch of cayenne pepper. Assemble English muffins and pour sauce over it.
