Ingredients
- 2-3 sweet potatoes
- spinach
- 1/2 cup cooked quinoa
- grape tomatoes
- feta cheese
- toasted almonds
- Cook quinoa in rice cooker.
- While quinoa cooks, wash, peel, and cut sweet potatoes into small cubes.
- Grill sweet potato cubes in a skillet with a bit of olive oil.
- Assemble salad with your favorite salad fixings.
