microwave coffee cake

Yes, I said MICROWAVE. Chef Jeff made this with his momma growing up and I made it for the first time this morning. I just can't get over that it bakes in the microwave in 5 minutes. Crazy! It was all from scratch, but very quick and tasty. Try it! It's a great for a Sunday brunch.

Ingredients

Cake

  • 2 cups flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1/2 cup cooking oil
  • 1/2 cup milk

Topping
  • 2 tablespoons flour
  • 1 tablespoon cinnamon
  • 1 tablespoon cocoa
  • 1/2 cup sugar
  • 1/4 cup cold butter

Glaze
  • 3/4 cups powdered sugar
  • 1 tablespoon milk

Directions
  1. Mix together dry cake ingredients, set aside
  2. Mix together eggs, oil, and milk and add to dry ingredients
  3. Mix well
  4. Pour batter into 9x9 glass dish
  5. Make topping by mixing everything together and cutting the butter into the dry ingredients
  6. Add topping to cake batter
  7. Microwave on high for 5-7 minutes
  8. Prepare glaze by mixing powdered sugar and milk together in a bowl
  9. Drizzle glaze on top of cake
